Elvis Granola from EatLiveRun. I’ve made this granola countless times and I’m addicted. I’ve made other granola recipes too but nothing compares. Jenna’s recipe is amazing. You will never want to buy granola from the store ever. again.
Pumpkin Oatmeal Muffins from PBF. I made these muffins recently and they were so tasty and I really loved that they were pretty healthy, too. Oh, I also added chocolate chips.
Quinoa Stuffed Acorn Squash from We Are Not Martha. I’ve been obsessed with acorn squash lately. And quinoa. So what could be better than an acorn squash stuffed with quinoa? This recipe was pretty easy and it came out great. Chris loved it, too, so that was a bonus! I also enjoyed this dish for lunch after the Stockade-athon on Sunday. 🙂
Vegan Pumpkin Sweet Potato Soup from About.com. I made this soup a while ago and froze it and still have a bunch left over! I love it. I adapted it a little bit and made my own version that is very tasty.
The Best Pizza Dough from EatLiveRun. I make this half white half whole wheat pizza dough all the time because God forbid I don’t have pizza dough in the freezer when the craving hits! Its super easy and it always comes out amazing. Check out my kale chips pizza, featured here.
Pumpkin Butter from SmittenKitchen. I made this pumpkin butter last fall after I ran out of my beloved TJ’s pumpkin butter. It took a while to make but man was it worth it. I even gave some away as gifts! And I actually found one jar leftover on my freezer this year and daringly sampled it. 12 months later it still tasted great. Now I know it lasts at least a year in the freezer. 😉 Try it on some pumpkin pie steel-cut oats!
