Black Bean Veggie Couscous

Oh couscous, I love you! Couscous is “granules of semolina made from durum wheat, the ideal pasta wheat, which are precooked and then dried” (source). Its so easy to make since you just add 1 cup of boiling water per cup of couscous and let it sit for five minutes.

Since I’m looking for easy recipes that I can make to bring on the go, I made this one up the other day when I had some spare time and I’m going to share it with you!

Black Bean Veggie Couscous

Ingredients

  • 2 cups of tri-color couscous (or plain, they both work! I just thought the tri-color were pretty.)
  • 2 cups of water
  • 1 cup of mixed frozen vegetables
  • 1 can black beans, drained and rinsed
  • 1 TBSP olive oil
  • garlic pepper
  • salt, to taste

Instructions

1. Bring 2 cup of water to a boil in medium sauce pan

2. While water is boiling, steam frozen veggies in microwave safe bowl for 4 minutes or until veggies are tender

5. Add couscous to boiling water and stir, remove from heat and let sit covered for 5 minutes

4. Add olive oil, vegetables, black beans, salt and garlic pepper to medium sized pan and cook until warm and veggies are slightly brown

5. Combine couscous and vegetables in large bowl. Add more salt to taste.

6. Serve warm or cold! Makes about 4 generous servings.
