1. Tuesday night Chris and I experimented in the kitchen and made Lentil Almond Burgers.

It was extremely messy and lentils flew all over the place! I also realized my mini food processor is too small to make the whole batch of burgers at once, so we had to process the vegetables first, followed by the lentils.

We then had to mix each together in a big bowl and then form them into patties (we made six total–leftovers!) They still came out pretty good! They had really good flavor, but were a bit crumbly. Nothing ketchup can’t solve! Any tips on how to get them to be more moist?

Tuesday’s dinner was also followed by a cute strawberry v-day cupcake!

2. I got new running shoes. After running a five mile race in Florida which resulted in a blister on my left foot, I knew it was time to get some new shoes. I have been running faithfully in New Balance 760s, but lately after longer runs, the outside of my left foot has been sore due my bunions. I’m thinking this means my shoe is no longer wide enough! So, I ordered New Balance 850s, another stability shoe, which come in double wide (woah). I ran in them for the first time last night on my treadmill for 2.5 miles.

Not only are they hideous and look like boats on my feet (I miss my pretty pink 760s), but I’m unsure of them. They fit well, width-wise, but I felt like there wasn’t much cushioning for the ball of my foot. I could also feel the left foot getting corrected as I ran, which was a little bit weird. I’m pretty sure I underpronate (I think my left foot is worse) since I have high arches. I don’t know whether to send them back or stick with them to see if I can break them in better.
3. This morning for breakfast I had a pretty tasty smoothie! I’m trying to drink more smoothies in the for breakfast since they are so healthy.
Chocolate Peanut Butter Banana Smoothie

Ingredients
- 1/2 cup of unsweetened almond milk
- 1 TBSP of dark chocolate dreams peanut butter (or any other nut butter)
- 1 ripe banana
- 1 cup of steamed kale (I used kale that I blanched and froze a while ago)
- 1/2 tsp maca powder
- 1 tsp of chocolate brown rice protein powder
Directions
1. Place all ingredients in blender and mix on high until all blended!
2. Enjoy!
