I was searching through my recipe collection on Saturday afternoon looking for something fall-ish to bake, and I found a great recipe for apple cranberry bread! It was adapted from a cookbook called “Guilt Free Cooking”. So here is the recipe I teased you with yesterday.
Apple Cranberry Bread, adapted from “Guilt Free Cooking”

Ingredients
- 2 eggs
- 3/4 cups of sugar
- 2 tablespoons of canola oil
- 1 cups of whole wheat pasty flour
- 1/2 cup of all purpose flour
- 1-1/2 teaspoons of baking powder
- 1 teaspoon of cinnamon
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of sea salt
- 2 cups of chopped, peeled apples
- 1 cup of dried cranberries
- 1/2 cup of chopped walnuts
Directions
1. In a medium bowl, combine eggs, sugar, and oil
2. Combine flour, baking powder, cinnamon, baking soda, and salt; add to the egg mixture, stirring until combined, batter will be thick
3. Fold in apples, cranberries, and walnuts
4. Transfer batter into a loaf pan, (i use 8x4x2 size pan) coated with cooking spray
5. Bake at 350 for 1 hr or until a toothpick inserted comes out clean
6. Let cool for 10 minutes before removing from pan
7. Slice and enjoy a slice with some apple butter and tea
